The Aquaculture Biology Lab studies aquatic biodiversity science for fishes and algae, combining field science with advanced techniques from genomics, genetics, and the life sciences. The lab clarifies the ecology and genetic characteristics of aquatic animals and plants, and investigates the mechanisms by which their diversity arises, is maintained, and changes. The lab has an unusual structure in which ichthyology and phycology have been handled within the same lab. For research on fishes and algae, the lab can accept undergraduates, graduate students, and postdocs; it does not accept students for Japanese eel research because that work is commissioned research.

The Aquatic Biochemistry Lab studies the mechanisms of innate and adaptive immunity in aquatic organisms, mainly fishes, at the molecular and cellular levels. As damage from infectious diseases in farmed fish becomes serious, the lab's goal is to develop preventive methods that use the immunity fish naturally possess. The lab focuses on fully elucidating the fish complement system, aiming to approach the whole picture of innate immunity in teleosts. How vaccines and immune-enhancing substances work is also a subject of study.

The Marine Resource Chemistry Lab studies the structure and function of enzymes that synthesize and degrade lipids such as glycolipids and sphingolipids. Using labyrinthulids (Labyrinthulomycetes), microbes that live in the sea, as subjects, the lab investigates the whole picture of lipid metabolism. The lab also works on elucidating the infection mechanisms of pathogenic bacteria, and on developing new antifungal drugs that target glycolipid metabolism in pathogenic fungi.

The Aquatic Environmental Biology Lab focuses on environmental problems in aquatic environments such as freshwater and the ocean, and conducts research aimed at solving them. Using a wide range of methods, including analytical chemistry, biochemistry, molecular biology, and behavioral science, the lab investigates the mechanisms behind red tide outbreaks and the effects of chemicals and microplastics on aquatic organisms. Since it was founded as the Laboratory of Aquaculture and Environment, the lab has worked toward its goal of "restoring aquatic environments damaged by human activity."

The Aqua Field Science Lab is based at the Fisheries Research Laboratory in Tsuyazaki, Fukutsu City, and studies aquatic organisms and their environments. The lab carries out field surveys of biodiversity and ecosystems, centered on fish, and research on spawning, development, and growth of marine invertebrates such as shellfish. The Fisheries Research Laboratory is a joint-use facility built for education and research at the sites where marine organisms live, and researchers from inside and outside the university visit it. The lab is basically for graduate students, but undergraduate students may also be able to join its research in some cases.

The Livestock Biological Function Lab studies how the bodies of livestock and poultry work, from the molecular level to the whole-animal level. Its work includes skeletal muscle development and meat quality, analysis of reproductive function using organoid culture, and the use of unused protein resources through improved rearing environments. The lab aims to realize sustainable livestock farming that also takes animal welfare and the environment into account. Because it was formerly called the "Second Laboratory of Animal Science," it is affectionately known within the university by the nickname "Chikuni."

The Animal Reproductive Physiology Lab studies the process of the "beginning of life" in mammals. It investigates the genes that are important from oocyte maturation, fertilization, and early development through implantation and placenta formation, as well as their mechanisms of action. So far, the lab has obtained findings such as the discovery of a new nuclear structure in the fertilized egg. By clarifying the mechanisms that control reproduction, the lab pursues research that leads to the development of new reproductive technologies.

The Zoology Lab conducts research aiming to clarify the mechanisms of mammalian reproduction from the standpoint of developmental biology. In addition to morphological approaches, the lab centers on the analysis of genes and proteins, and in particular studies the molecular structure of sperm, their morphogenesis, and the mechanisms of flagellar motility. It also studies epigenetic regulation during the differentiation of spermatogonial stem cells. The lab was established as the First Chair of Zoology when the School of Agriculture at Kyushu University was founded, and it is the oldest chair in the School of Agriculture.

The Functional Water, Functional Foods, and Energy Lab takes on the challenge of discovering and elucidating new functions hidden in water and food. Its aim is to contribute to establishing clinical food function science, which uses water and food to help prevent and improve diseases related to oxidative stress. The lab conducts comprehensive research, from searching for functional water and functional foods that are expected to prevent or improve disease, to demonstrating their efficacy and elucidating their mechanisms of action. It is an endowed chair funded by donations from companies, and it conducts research with the Cell Regulation Engineering field of the Faculty of Agriculture as a cooperating chair.

The Endowed Chair of Food Immune Function Analysis searches for "immune-boosting components" in foods and studies ways to make effective use of them. The lab focuses mainly on fucoidan, which is abundant in Okinawa mozuku seaweed, and works to clarify how it enhances immune function and to develop methods for analyzing it. Joint research with companies and other research institutions, and outreach through events such as public lectures, are also pillars of its activities. The chair is part of the Division of Bioscience and Biotechnology, Faculty of Agriculture, Kyushu University, and was established with donations from VENTUNO Co., Ltd. and the NPO Fucoidan Research Institute (a specified nonprofit corporation).
