The Food Functional Analysis Lab investigates the reactions in which lipids undergo chemical changes such as oxidation and glycation in foods and in the body, and evaluates their effects on quality and on the body. Using mass spectrometry and other methods, the lab develops analytical techniques that distinguish lipid hydroperoxides, the primary products of oxidation, at the isomer level. The lab also studies functional components such as antioxidants from two sides: protecting food quality, and their form and function inside the body.

The Eukaryotic Microbial Functions Lab studies molds (especially Aspergillus oryzae) and yeast, which play important roles in the fermentation industry, focusing on how the genes and proteins involved in producing useful substances function. Based on genetic resources and genome information, the lab systematically clarifies gene expression regulation and protein functions, and aims to improve productivity by understanding and modifying cell functions. The lab also explores the functions of unknown and unused genes, and conducts research on developing technologies to solve environmental problems and on industrial applications.

The Bioactive Molecular Dynamics Lab researches and proposes organic chemistry approaches to creating pharmaceuticals. Through chemical biology research, the lab aims to extend healthy life expectancy. Combining medicinal chemistry, synthetic organic chemistry, molecular biology, cell biology, and computational chemistry, the lab carries out all of molecular design, organic synthesis, and activity evaluation. Lab visits are welcome at any time; please contact the lab in advance.

The Natural Products Chemistry and Biology Lab studies natural organic compounds with high physiological activity. The lab searches for and isolates these compounds, determines their structures, and investigates the organisms they originate from, as well as their biosynthesis, metabolism, and mechanisms of action. It focuses in particular on marine toxins that cause food poisoning, including pufferfish toxin and paralytic shellfish toxins. The lab also identifies the target proteins on which these compounds act and studies their structures and functions.

The Molecular Information Chemistry Lab focuses on analyzing the physiological functions of small organic molecules and advancing medicinal chemistry. The lab provides education in organic chemistry and conducts chemical biology research as its extension. The lab invented AUTAC, a new technology that uses autophagy to remove proteins and organelles inside cells that cause disease. It is also working to improve vancomycin, an antibiotic regarded as a last resort for treating hospital-acquired infections.

The Molecular Biochemistry Lab conducts research aimed at elucidating epigenetic functions and applying them. The structure of chromatin, which is made of DNA and histones, and the interactions between chromatin and the cell nucleus play an important role in regulating how the genome functions. This regulation of genome function by chromatin and the cell nucleus is called epigenetics, and it is closely linked to biological phenomena such as development, differentiation, aging, and disease. In addition to the molecular biology of chromatin and the cell nucleus, the faculty's areas of expertise include X-ray microscopy and biophysics.

The Plant Cell Biochemistry Lab studies how plants take up nitrogen and use it inside their bodies. Plants absorb nitrogen from the soil through their roots, convert it into amino acids, and synthesize many nitrogen-containing compounds, including proteins, nucleic acids, and chlorophyll. Animals depend for their survival on the nitrogen compounds and other compounds that plants synthesize. The lab also studies the recycling mechanisms that plants have developed internally to make efficient use of limited nitrogen.

The lab carries out education and research to clarify the roles that nutrients and functional food components play in the body, and the mechanisms behind their actions. It analyzes the anti-aging effects of vitamin K (menaquinone-4), biotin, and vitamin B6. It examines effects such as anti-inflammatory action and improvement of cognitive function. The lab is also searching for functional substances in foods and working to clarify their mechanisms of action.

The Enzyme Chemistry Lab studies the structure, function, and molecular evolution of enzymes and proteins involved in special biological functions and diseases. The lab conducts venomics research on proteins in the venom of habu snakes and spiders, aiming to develop Alzheimer's disease therapeutics and biopesticides derived from venomous animals. In its Alzheimer's disease research, the lab investigates how γ-secretase, which produces amyloid-β, is regulated, as well as drug candidates derived from venomous animals. In its pearl oyster research, the lab uses methods such as three-dimensional structure analysis to study how proteins are involved in pearl formation and luster.

The Structural Chemistry of Life Lab uses chemical synthesis (total synthesis) to produce marine natural products that have complex structures and show important biological activities. Building on total synthesis, the lab studies the structures and biological functions of natural products, with the aim of contributing to life science research and drug discovery science. Most marine natural products can be obtained from nature only in extremely small amounts, so supplying material by chemical synthesis plays an important role in analyzing their mechanisms of action. On the lab's website, it is introduced under the name "Makoto Sasaki Lab."
