The Food System Lab studies how food is distributed from the perspective of distribution economics. Many distribution actors are involved from upstream to downstream, and their behaviors affect one another. The lab clarifies the behavioral principles of each actor and explores institutional design and contract design that lead to overall optimization. Its main interests are the efficiency and stability of food distribution and food safety.

The Agrarian Question Lab studies the problems surrounding agriculture under a capitalist economy, and the related policy challenges, from the perspective of political economy. The lab holds that agriculture is slow to become capitalized and tends to have lower productivity than industry, and that this has caused various political-economic problems in Japan and abroad. It critically examines the relationship between agrarian problems and agricultural policy, and identifies policy challenges. It also analyzes movements within agriculture, such as cooperatives, social movements, and endogenous development, and looks for ways to solve problems from the agricultural field itself.

The Fisheries Economics Lab studies, from the perspective of resource economics, problems arising from the finiteness and uncertainty of fishery resources and from the diverse interests of those involved in fisheries. Based on the relationship between the regeneration of fishery resources and fishing effort, the lab aims to improve fishers' profits. Using resource economics and econometric methods, the lab investigates issues such as adding value to seafood products and conflicting interests on the high seas. In April 2025, the lab's name changed from the Environmental and Life Economics Lab to the Fisheries Economics Lab.

Since its founding, the Plant Breeding Lab has consistently conducted research in genetics and breeding on rice. Rice is one of the world's three major cereals and the most important crop when considering the world's food problems. The lab pursues research on locating genes, research on the evolution and differentiation of cultivated rice, and research on observing chromosomes. The lab uses sets of experimental rice lines it has developed as materials for this research.

The Crop Science Lab studies the relationship between environmental stress and crop production. Its goal is sustainable crop production that can continue stably even as the global environment changes. Using a variety of experimental approaches, including crop science, molecular biology, and morphology, the lab conducts research ranging from field trials to cell biological analysis. The lab began in 1920 as one of the chairs established in the Faculty of Agriculture at Kyushu Imperial University.

The Horticultural Science Lab studies the genetics, breeding, physiology, ecology, and cultivation of fruit trees, vegetables, and ornamental flowering plants. It aims to elucidate the "diversity" and "universal phenomena" of horticultural plants, and to apply this knowledge to society. Its research subjects are diverse, including Japanese camellia, cyclamen, asparagus, lotus, citrus, and grape. The lab's activities began in 1922, when a full-time assistant professor was appointed to the horticulture department.

The Plant Production Physiology Lab takes "photosynthesis" and "abiotic stress" as its research themes, working mainly on crops to elucidate the mechanisms of photosynthesis and dry matter production and to apply them to agricultural production. By changing the type of photosynthesis and applying the traits of plants that grow in salt-rich environments, the lab aims to create new food crops adapted to environmental stress. Its research combines surveys of yield and photosynthetic rate, molecular biology experiments such as gene transfer, and computational biological data analysis (bioinformatics).

The Plant Pathology Lab studies the microorganisms that cause diseases in plants and crops. Its main subject is Ralstonia solanacearum, the bacterial wilt pathogen. This bacterium and its relatives (the R. solanacearum species complex) are globally important bacterial pathogens that infect more than 200 plant species. The lab investigates how diseases occur and the characteristics and functions of the pathogens, and uses this research to help develop control methods based on environmental conservation.

The Entomology Lab studies insects of the Asia-Pacific region from the perspectives of taxonomy, ecology, and biogeography, carrying out basic research that underpins biodiversity conservation. Through pest control, the use of beneficial insects, and surveys of various insect communities, the lab also conducts research related to plant protection and nature conservation. A distinguishing feature of the lab is its systematic taxonomic research based on specimens and books accumulated over many years. The insect specimen collection held by Kyushu University, centered on the lab, is used by a wide range of researchers in Japan and overseas.

The Insect Genome Science Lab uses the silkworm, a model insect, to study chromosome structure and epigenetic regulatory mechanisms. It also develops systems for producing useful substances and works to clarify the molecular mechanisms of insect physiology. The lab carries out its research in collaboration with various labs, including those within the Center for Insect Science and Industrial Innovation. The lab provides silkworm-based protein production technology to KAICO Inc., a Kyushu University startup founded in 2018.
